SWAP INS: We used sherry vinegar but use whichever vinegar you have on hand. Instead of parsley, you could use any other soft herb. Instead of almonds, you could use walnuts, pistachios, or pine nuts.
SWAP INS: For leafy greens, use spinach, kale, cabbage, silverbeet or mixed leaves. For dill, use parsley, mint or basil.

Due to their shorter shelf-life and plastic packaging, buy leafy greens by the bunch rather than bagged. it’s much cheaper too.
