These words are by way of a review and also a tribute to its author, Russell Norman, who passed away unexpectedly in November 2023, aged 57. A real force of nature, Russell was a visionary restaurateur, co-founding the hugely successful Polpo, which brought the concept of Venetian to a wider and eager audience – and latterly Brutto, a
