Mini potato bites
Perfectly portioned bite-sized morsels, dress them up with a variety of toppings to suit your taste.
MAKES Approx 20 PREP 15 mins COOK 30 mins
✱ 500g bag miniature baby new potatoes
✱ 2tsp olive oil
✱ Bushy sprig rosemary, leaves stripped
✱ 4 fat garlic cloves, bashed
FOR THE TOPPINGS
✱ 150g soured cream
✱ 20g caviar
✱ A few chives, snipped
1 Heat the oven to 180C Fan/Gas 6. Toss the potatoes in the oil, rosemary and garlic, plus plenty of seasoning. Mark a deep cross on the top of each. Roast for 30 mins, tossing occasionally. Set aside.
2 Warm in a hot oven to serve, then top with a dollop of soured cream, caviar and a sprinkling of chives and black pepper.,
COOK’S TIP
We also love topping these with simple crème fraiche and smoked salmon or try a Tex-Mex dip trio.
