With the festive season looming, KG editor Steve Ott turns the spotlight on parsnips – an essential component of any Christmas roast or warming winter soup

Parsnips, sweetened by the first frosts, are one of the essentials of a traditional Christmas feast. However, they aren’t just for Christmas – although great roasted they are also delicious in a winter stew and add a sweet, earthy note to warming winter soups. They are relatively easy to grow, too. Canker can be overcome by choosing resistant varieties, carrot fly is less of a problem to these substantial roots than it is with carrots (the damage is only surface deep and easily peeled off) and slugs generally have less of an impact.
