Italian wedding soup Zuppa di Nozze

In many parts of Italy it is traditional to serve soup as a first course at a wedding.
• 1 tbsp olive oil
• 1 onion, finely chopped
• 1 garlic clove, peeled and finely chopped
• 65g pancetta cubes
• 2 carrots, peeled and cut into small cubes
• a small handful of fresh basil
• a sprig of fresh rosemary
• 200ml red wine
• 1.5 litres chicken stock
• 80g spinach leaves
FOR THE MEATBALLS

• 200g lean minced beef
• 200g lean minced pork
• 1 small free-range egg, beaten
• 30g dried breadcrumbs, such as panko
• 45g finely grated parmesan, plus extra to serve
