Brewers who stuck with barrels push limits of flavors.

On a recent visit to Massachusetts, I found myself strolling through the back area of a brewery I respect. Exhibit ‘A’ Brewing is known for its Kölsch and porter but has also developed a barrel-aging program with a few delightful surprises.

Passing by the racks of stacked barrels, at the back of the brewery, I ran my hand across the coarse surface of one, and breathed in deeply for the full olfactory experience. The brewer, Matt Steinberg, noted that not all were filled with beer
