Get the PARTY STARTED!

Prawn cocktail lettuce cups

Lighter and more refreshing than the typical prawn cocktail, you can prepare this in advance then put together just before serving.

MAKES 12 PREP 10 mins

★ 1 red onion, thinly sliced
★ 2tbsp white wine vinegar
★ 1tsp caster sugar
★ 70g thick yogurt
★ 30g crème fraiche
★ 3tbsp tomato ketchup (we used Big Tom)
★ 2tsp Dijon mustard
★ 300g cooked king prawns
★ 1 baby gem, leaves separated
★ Small bunch parsley, finely chopped
★ Smoked paprika, to garnish

1 Put the onion, vinegar and sugar in a small bowl, mix and leave to pickle.

2 Mix the yogurt, crème fraiche, ketchup and mustard together. Add the prawns and coat in the sauce.

Spoon a heaped tablespoon of prawn mixture into each lettuce leaf just before serving. Top with the pickled onions, parsley
