I first came across Russian honey cake when I was I developing the menu for The Charles. I loved how labour-intensive the process was – not many people will spend three days making a cake [The Charles’ honey cake has 28 layers], so I knew it would be something special to have on the trolley.
As daunting as the recipe might seem, it’s relatively easy. Give yourself enough time for each stage of the recipe, and trust the process, regardless of how unusual the method might seem! Roll out the mix as soon as you’ve incorporated
