Gingerbread Cake
MAKES 1 (8-INCH) CAKE
Working with cold or slightly frozen cake layers makes trimming and assembling much easier.
¾ cup unsalted butter, softened
⅔ cup firmly packed light brown sugar
⅔ cup granulated sugar
3 large eggs, room temperature
1½ teaspoons vanilla extract
3 cups all-purpose flour
1 tablespoon ground ginger
1 tablespoon ground cinnamon
2½ teaspoons baking powder
1 teaspoon ground nutmeg
