CRISPY CAJUN-FRIED ALLIGATOR WITH COMEBACK SAUCE

Makes 4 to 6 servings

Alligator is often enjoyed in regions that specialize in Cajun and Creole cooking, as well as in other areas of the South. When fried, its flavor and texture is similar to chicken and quite delicious, especially when served with a spicy dipping sauce and hand-cut fries.

½ cup mayonnaise
2 tablespoons whole-grain mustard
2 tablespoons ketchup
1 tablespoon Worcestershire sauce
1 tablespoon minced white onion
1 tablespoon plus 2½ teaspoons
Cajun seasoning, divided
Vegetable oil, for frying
1 cup whole buttermilk
1 large egg
1 tablespoon hot sauce
2 cups all-purpose flour
1 teaspoon garlic powder
1 teaspoon onion powder
1 pound alligator, cut into
1-inch cubes
French fries and lemon wedges, to serve
Garnish: chopped fresh parsley

1. In a small bowl, combine mayonnaise, mustard, ketchup, Worcestershire, minced onion, and ½ teaspoon Cajun seasoning.
