90g (½ cup) quinoa1 tbsp sesame oil1 small red onion, thinly sliced1 clove garlic, grated4cm piece ginger, peeled and grated½ tsp ground coriander1 tbsp salt-reduced soy sauce or gluten-free soy sauce1 red capsicum, cut into 1cm slices100g green beans, trimmed and cut in half1 large (about 250g) zucchini, sliced2 tbsp sesame seedsSmall bunch coriander, roughly chopped
