Birria Beef Tacos
SERVES 8 (FREEZE HALF FOR LATER)
INGREDIENTS
230g chipotle in adobo sauce
6 cloves garlic, crushed
⅓ cup white vinegar
4 vine-ripened tomatoes, chopped coarsely
1 cinnamon stick
4 bay leaves
2 tsps dried oregano
2 tsps ground cumin
2 tsps fine sea salt
1 medium onion, chopped finely
1.5kg gravy beef, untrimmed
TO SERVE for 4 (3 tacos each)
12 x 15cm corn tortillas
2 cups coarsely grated fontina or cheddar cheese
