Oreo macarons
MAKES 10-12
For the macaron shells
190g icing sugar
10g crushed oreos
100g ground almonds
3 large free-range egg whites
75g caster sugar
For the filling
90g icing sugar
10g crushed oreos
50g unsalted butter
1 For the macaron shells, add the Oreos to a food processor and blitz until crumbs.
2 Add the icing sugar and almonds to a food processor and whizz for two minutes. Sieve the mixture into a large bowl.
3 Put the almond mixture back into the food processor and whizz for a further minute. Re-sieve the mixture into the large bowl and leave to one side.
