RAISING THE BAR

The crew behind Moo Brew has opened a microbrewery and taproom in the heart of Hobart. Named after its Salamanca location, Manky Sally’s embraces the weird and wonderful world of MONA, with artworks foraged from four of the museum’s warehouses. Sip Tassie-made ales alongside zero-waste snacks, including okonomiyaki with soy-braised venison and chargrilled wallaby skewers.

I really don’t like food waste. I sometimes act like a human labrador, doing my bit by hoovering up discarded food. Horrendously burnt snag? Just needs more sauce and a bread blanket!

This is probably a response to having a mother who grew up in a poor mining family, post WWII. She saves ‘drippings’ from her cooking (commonly spread on bread in her youth), and still relishes butter like cows were made of actual gold. This respect for food is both sweet and sobering at the same time.
