Pörkölt is a slow-cooked Hungarian stew, enriched with sweet paprika. Tarhonya is the small egg pasta-like pieces stirred through the stew to cook minutes before serving.

Achiote (annatto) is a bright red paste essential to Yucatánstyle Mexican dishes. It is a blend of ground annatto seeds and spices, such as cumin, pepper, coriander, oregano, cloves and garlic. It adds an earthy, somewhat sweet and spicy, slightly smoky flavour. It is available from specialty food stores, Mexican grocers and online.
