I feel very fortunate to be surrounded by so many incredible people who have shared their stories, expertise and passion with us in this issue.

When I met Lori Nikkel, the CEO of Second Harvest, Canada’s largest food rescue charitable organization, I felt like I had known her forever. Her commitment to ending hunger and reducing the environmental impact of food wastewe are thrilled that she is sharing her wisdom with us starting with a regular column in this issue. On page 74, find her tips for extending the life of tomatoes and creating new recipes with the ones on your counter that don’t look the greatest right now but are still packed with nutrition.
