Black & Blue Berries

BLACKBERRY CRUMBLE BARS

MAKES ABOUT 16

These quick and easy bars are a great option for a potluck and ideal to pack for a picnic.

1¼ cups unsalted butter, softened
1 cup firmly packed light brown sugar
2 cups quick-cooking oats
2 cups all-purpose flour
¾ teaspoon baking soda
1 (13-ounce) jar blackberry preserves*
1½ cups fresh blackberries, sliced lengthwise
1 tablespoon lemon zest

1. Preheat oven to 350°. Line a 13x9-inch baking pan with parchment paper, letting excess extend over sides of pan; lightly spray with cooking spray.

2. In the bowl of a stand mixer fitted with the paddle attachment, beat butter and brown sugar at medium speed until smooth and creamy, about 2 minutes, stopping to scrape sides of bowl. Add oats, flour, and baking soda, and beat at low speed until combined.

Press two-thirds of dough into bottom of prepared pan in an even layer.
