ASIAN CHICKEN MEATBALLS (AS SEEN ON MY MA KOOK BETER AS JOUNE)

Hier is die resep waarmee ek en my dogter Nicole gewen het op die eerste episode van My Ma Kook Beter As Joune. Baie dankie aan almal vir die moot boodskappe en gelukwensings. Ons waardeer dit opreg.

Asian chicken meatballs simmered in a fragrant coconut curry sauce, with sweet peppers and snap peas from our home garden. Served with sticky jasmine rice.

MEATBALLS

COCONUT CURRY SAUCE

MEATBALLS

Mix all the ingredients for the meatballs. Wet your hands slightly if the mixture is a bit sticky.

Roll medium-sized balls and shallow fry until cooked through. Remove from pan and set aside.

COCONUT CURRY SAUCE

In the same pan, sauté the onion, garlic, ginger and curry paste. Stir.

Add the coconut cream, lime leaves, fish sauce or lemon juice, sugar (if you're using it) and veggies. Simmer on low heat for about 15 minutes.

Add the meatballs, coriander and spring onions.

Garnish with the, coconut flakes.

CHICKEN POT ROAST

Preheat oven to 220°C.

On a stovetop (on medium to high heat) add olive oil to a Dutch oven pot. I used a 27 cm-wide oval Le Creuset pot.

Clean the chicken and dab with paper towels to remove excess moisture. Season with BBQ spice.

Add lemon, rosemary and thyme inside the cavity and tie the legs together.

Place chicken breast-side down into the hot pot. Sear on each side.

Place chicken breast-side up. Add veggies and stock.

Place in the oven and cook for 45 minutes with the lid on.

Remove lid and cook for an additional 15 minutes or until golden brown.

Remove and serve with sides of your choice.
