Tuna quesadillas

A Mexican-inspired toastie that’s quick to prepare and cheap to make.
YOU WILL NEED
160g tin tuna, in olive oil, drained Juice of 1 lime
50g sweetcorn, drained
Handful of coriander, chopped
1-2tbsp chipotle or Tabasco sauce
2 roasted red peppers, drained from jar, sliced
3tbsp grated Cheddar
2 large tortilla wraps
1 avocado, quartered, stone removed
1 tomato, deseeded, diced
2 spring onions, sliced
100g bag rocket salad
