BEAST OF A BURGER

1kg pork and veal mince
1 Tbsp Southern Style BBQ seasoning
4 free-range egg yolks
2 Tbsp smoky BBQ sauce
1 cup fine white breadcrumbs
Sea-salt flakes and freshly ground black pepper, to season
100g provolone, cut into 8 slices
400g sauerkraut
1 cup apple sauce
2 Tbsp extra virgin olive oil
8 slices burger (or tasty) cheese
4 burger buns, split Aioli, to serve
½red onion, shaved, to serve
