Caul-Fat-Wrapped Grilled Venison Heart

INGREDIENTS (MAKES 12 APPROXIMATELY 6-OUNCE SAUSAGES):

INGREDIENTS:

One deer heart, cleaned and cut into circles
Enough caul fat to wrap heart circles
1 cup Morton Tender Quick
4 cups water

DIRECTIONS:

Brine sliced deer heart in Tender Quick overnight. Thoroughly rinse off heart under cold water upon remove.

Wrap sliced heart
