S’mores Pie

A S’MORE IS A sticky, messy, sweet trifecta of crunchy graham crackers, melted milk chocolate, and a gooey marshmallow toasted to your desired level of char. It’s nostalgic and fun, the kind of treat you eat gathered around a campfire, marshmallow-toasting stick in hand, unfazed by sticky fingers and chocolate-smeared cheeks. But what if you want to showcase these flavors at a party?

With this goal in mind, I set out to transform s’mores into an impressive pie. I’d tackle each layer in turn, starting with the crust. To keep the graham cracker flavor front and center, I turned to a tried-and-true graham cracker crumb crust recipe. A simple combination of the crushed crackers, sugar, salt, and melted butter, it’s nice and sturdy and can hold up to hefty fillings.
