Fresh Catch of the Day - Octopus

Cleaning Octopus

1. Cut tendon at opening of head.

2. Turn head inside out and remove entrails.

3. Remove eyes and any cartilage.

4. Use generous amounts of Hawaiian rock salt or table salt while vigorously massaging octopus to remove slime. Rinse and repeat twice.

5. Rinse thoroughly to remove slime and salt.

Helpful Hint: Freezing helps to tenderize octopus.
