WARM LENTIL, GRAPEFRUIT, AND BITTER GREENS SALAD

Serves: 4-6 as a side

■ 200g Puy, green, or brown lentils, rinsed■ 1 large grapefruit■ 4 anchovy fillets, finely chopped, or 1 tsp anchovy paste■ 1 large garlic clove, minced■ 3 tbsp extra-virgin olive oil, plus more for drizzling■ 2 tsp Dijon mustard■ ½ tsp kosher salt■ ¼ tsp crushed red pepper flakes■ 1 small head radicchio (200g), cored and thinly sliced■ 1 medium head endive (115g), thinly sliced lengthwise■ 80g almonds, toasted and coarsely chopped■ Freshly ground black pepper■ Flaky salt (optional)

Bring a medium pot of salted water to the boil anda colander and transfer back to the pot.
