BREAKFAST GARLIC + CHILLI HASH BROWNS
Everyone will lovethese handmade hash browns – they are shallow-fried until they're ridiculously crispyand loaded with garlic and chilli. Make for brunch, lunch or a relaxed dinner, or make them smaller for little fried rosti to serve as snacks.
- 1 large potato, grated
- 6 cloves garlic, crushed and roughly chopped
- 1 chilli, thinly sliced
- ¼ cup chickpea flour
- ¼ cup water
- 1 tsp sea salt
- Black pepper, to taste
- ½-¾ cup oil, for cooking
TO SERVE
- Rocket
- Flesh of 1
- avocadosliced
- Chipotle lime mayo or smoky tomato relish
- Chilli flakes
- 1lemon, cut into wedges
1 Place all hash brown ingredients, except the cooking oil, in a bowl and mix until combined. Place the oil in a pan and heat over a medium-high heat. To check it's hot enough, drop in atiny ball of batter. Once it starts to sizzle and bubble around the edges, the oil is ready.
