Gin and elderflower fizz with manchego and olive skewers

For the gin fizz (makes 1):

Handful ice20ml lemon juice50ml ginDash elderflower cordial20ml sherry or white port Fizzy apple juice, such as Appletiser Fresh mint, to garnish

For the skewers (makes 20):

20 almond-stuffed olives200g Manchego, cut into 20 bite-sized chunks100g pack sliced Spanish chorizo You will need:20 cocktails sticks

1 Fill a glass with ice and pour over the lemon juice, gin, cordial and sherry or white port. Mix, then top up with fizzy apple juice. Garnish with fresh mint.

2 Thread 1 olive, a square of cheese and 1-2 slices of meat onto each cocktail stick, then serve with drinks.
