Smoked trout fusilli
This classy pasta dish lends itself to many occasions – it’s perfect for a fancy family supper or for dinner with friends.

✱ 300g fusilli pasta
✱ 1tbsp creamed horseradish
✱ 2tsp fresh dill, plus extra for garnish
✱ 200g mascarpone
✱ 100g pack of smoked trout, roughly torn
✱ 80g watercress, any thick stems removed
✱ Zest of 1 lemon
1 Bring a large pan of salted water to a boil and cook the pasta according to the pack instructions.
2 Meanwhile, in a small bowl mix together the horseradish, dill and mascarpone, then season with salt and pepper to taste.
3 Drain the pasta, return to the pan off the heat and stir through the horseradish mixture. Add the smoked trout, most of the watercress and toss to combine.
4 Divide into bowls and top with the lemon zest and remaining watercress.
