Restaurateur Ben Williamson is behind a clutch of hotspots in Brisbane, including Agnes, a 100% woodfired restaurant in the formerly gritty Fortitude Valley. It’s located in an old brick warehouse on Agnes Street (unsurprisingly). Slated to open in March 2020, the pandemic and subsequent lockdown meant that Ben and his partners had to think on their feet. Agnes Bakery opened in April of that year, serving takeaway woodfired cheesecake, cinnamon doughnuts and custard-and-almond kouign-amanns to queues of restaurantdeprived punters.
