Shortcut dinners!

SPANISH RICE

SERVES 4 PREP 5 MINS COOK 15 MINS

250g pkt diced chorizo
1 onion, chopped
2 garlic cloves, crushed
300g frozen prawns, thawed
2 x 250g pkts microwave Mexican rice
1½ cups frozen mixed vegetables (capsicum, corn, peas), thawed
½ cup fish stock
¼ cup chopped parsley, plus extra leaves to serve
lemon wedges, to serve

1 Heat a targe frying pan on high. Saute chorizo 2-3 mins until golden and crisp. Add onion and garlic. Saute 2-3 mins until onion is tender.

Stir prawns through and cook 1 min. Mix rice, vegetables and stock through. Bring to simmer and cook 4-5 mins until almost drg.
