SPANISH RICE
SERVES 4 PREP 5 MINS COOK 15 MINS
• 250g pkt diced chorizo
• 1 onion, chopped
• 2 garlic cloves, crushed
• 300g frozen prawns, thawed
• 2 x 250g pkts microwave Mexican rice
• 1½ cups frozen mixed vegetables (capsicum, corn, peas), thawed
• ½ cup fish stock
• ¼ cup chopped parsley, plus extra leaves to serve
• lemon wedges, to serve
1 Heat a targe frying pan on high. Saute chorizo 2-3 mins until golden and crisp. Add onion and garlic. Saute 2-3 mins until onion is tender.
Stir prawns through and cook 1 min. Mix rice, vegetables and stock through. Bring to simmer and cook 4-5 mins until almost drg.
