BLITZED SALAD

Blender to the rescue – this super-speedy dish is perfect if you need to whip up a salad in a flash. Chuck in your veg, toss in your aromatic dressing and seeds, give it a whizz and lunch is served.
INGREDIENTS
• 1 tsp cumin seeds• 1 tsp caraway seeds• 1 tsp fennel seeds• 50ml/2fl oz olive oil• 2 cloves garlic, peeled and thinly sliced• 2 carrots (150g/5oz)• 2 spring onions (40g/1½oz)• 200g/7oz Brussels sprouts• 50g/2oz raisins• A handful of fresh coriander• 50g/2oz sunflower or pumpkin seeds• Juice of 1 lemon
