BAR REPORT

“Republic of Fremantle applies modern fittings and furnishings to the docklands’ historical canvas. The must-order drink is undoubtedly the Fig Leaf Negroni Spritz, and at the new in-house restaurant, the crispy crumbed lion’s mane mushroom. The detail in everything from stamped ice cubes to vigilant service and product knowledge is impressive but never theatrical. It’s worth the trip to Freo.” – Merrick Watts
