As much as I like to write about cooking different types of game, there is no way around the fact that pheasants are the most commonly shot gamebird. Although I am told there are far fewer birds around this season owing to avian influenza, I have to say that I haven’t noticed — pheasants are everywhere and we still need to eat them.
