Harvest parsnips as needed

Dig up parsnips as and when you need them in the kitchen. It’s not worth storing them as you might with other crops because not only do they keep well in the ground but the flavour also improves as the soil gets colder, due to the plant’s ability to turn the starch into sugar to prevent frost damage in the roots.

The roots can go very deep, so make sure you lift them out without causing any damage by digging down about 10cm
