INGREDIENTS

250ml milk
50ml bourbon whisky
50g dry mango, chopped
20g fresh coconut slices or coconut chips
100g sugar
100ml lemon juice
2 pandan leaves

METHOD

Warm milk in a saucepan and bring to a simmer (do not boil).

Add dried coconut chips, chopped dried mango, pandan leaves and sugar. Simmer at a low temperature till sugar dissolves.
