PEACH AND TOMATO SALAD WITH FENNEL-CHILLI DRESSING

4 yellow peaches
4 heirloom tomatoes
1 buffalo mozzarella ball or burrata
FENNEL-CHILLI DRESSING
1 tbsp fennel seeds, toasted
1 tsp dried chilli flakes Pinch of sea salt flakes
2 tbsp lemon juice
¼ cup extra-virgin olive oil
1 Slice tomatoes into a mix of wedges and thick slices. Halve peaches and remove stones, then slice into wedges. Combine tomatoes and peaches in a serving bowl.
