■ 2 (1.2kg) large mangoes
■ 2 tsps finely grated lime rind, plus extra to serve
■ 2 tblsps lime juice
■ 600ml tub thickened cream
■ 2 tsps coconut essence
■ 320g can sweet condensed coconut milk
■ ½ cup mango juice
■ ¹⁄³ cup coconut flavoured rum
■ 200g packet sponge finger biscuits
■ Extra mango slices and toasted flaked coconut, to serve
