Like so many of us, Darren Robertson has some very fond childhood memories of Christmas Day.

“It was the one time of the year that we would have an abundance of food,” he says. “Big bowls of nuts, satsumas, mandarins. And at the table, it was like share plates on steroids – condiments, vegetables, sauces, chutneys. It was these things that made it really special. All the add-ons and all the sides were what was the most exciting to me.”

It’s no surprise, then, that Robertson has chosen to share with us a taste of the Christmas sides that he plans to make for his family and friends this year. But if he could choose only one?

“It would have to be roast potatoes,” he says. “It’s such a comforting, familiar dish. In my recipe, I cook the potatoes in stock first,
