• 500g new potatoes, quartered • 1tbsp olive oil • 450g jar roasted red and yellow peppers, drained and roughly chopped • 2 cloves garlic, finely sliced • 1 red chilli, de-seeded and sliced • 1 green chilli, de-seeded and • 2 salmon sides, sliced into 6 portions, skinned (or leave skin on and remove after cooking) • Handful mint leaves, for serving (optional) • Handful coriander leaves, for serving (optional) For the spice mix: • 1tsp turmeric • 2tsp ground cumin • 1tsp chilli flakes
