Cauliflower Schnitzel

SERVES 6 PREP & COOK 50 MINS

2 medium cauliflowers (1kg each)

3 eggs

2 cloves garlic, crushed

3 tsps Dijon mustard

1½ cups panko crumbs

½ cup finely grated parmesan

¹⁄³ cup plain flour

1½ x 420g jars Whole Cherry Tomato Pasta Sauce

1½ cups grated pizza cheese

Mixed salad leaves, to serve
