INGREDIENTS
120g packet of mung bean vermicelli (see Tip)
2 tblsps vegetable oil
4 garlic cloves, crushed
2 cm piece of fresh ginger, peeled and finely chopped
1 red bird’s eye chilli
4 spring onions, finely sliced
2 tblsps oyster sauce
1 tblsp soy sauce
1 tblsp dark soy sauce
1 tblsp Shaoxing wine
1 tsp sugar
12 raw prawns, peeled and deveined, tails
