Cakes with the WOW FACTOR

CLASSIC CHRISTMAS CAKE

Fruit laden with a hint of ginger and spice make this a delicious cake. If you favour a flatter, wider cake, bake this in a 20cm tin, adjusting the timings a little to make sure the skewer comes out clean.

SERVES 20 PREP 1 HR, PLUS SOAKING AND COOLING COOK 2 HRS 30 MINS

500g mixed dried fruit

4 balls stem ginger in syrup, chopped

150ml cherry brandy, plus extra for feeding

250g unsalted butter, softened

200g dark brown muscovado sugar

4 medium eggs

250g plain flour

2tsp baking powder

150g ground almonds

2tsp mixed spice
For the marzipan and icing:

2tbsp smooth apricot jam

500g pack marzipan

1 medium egg white

250g icing sugar, plus
