CLASSIC CHRISTMAS CAKE
Fruit laden with a hint of ginger and spice make this a delicious cake. If you favour a flatter, wider cake, bake this in a 20cm tin, adjusting the timings a little to make sure the skewer comes out clean.
SERVES 20 PREP 1 HR, PLUS SOAKING AND COOLING COOK 2 HRS 30 MINS
✣ 500g mixed dried fruit
✣4 balls stem ginger in syrup, chopped
✣150ml cherry brandy, plus extra for feeding
✣250g unsalted butter, softened
✣200g dark brown muscovado sugar
✣ 4 medium eggs
✣ 250g plain flour
✣ 2tsp baking powder
✣ 150g ground almonds
✣ 2tsp mixed spice
For the marzipan and icing:
✣ 2tbsp smooth apricot jam
✣ 500g pack marzipan
✣ 1 medium egg white
✣250g icing sugar, plus
