(makes approx. 24-30 depending on cutter size) Prep time: 25 minutes plus two hours resting time

65g ground almonds/almond flour

200g soft brown sugar (light or dark)

115g soft unsalted butter

1 medium organic egg

½tsp salt

½tsp baking powder (or baking ammonia** see note)

1tsp cinnamon

½tsp ground nutmeg

½tsp ground cloves

¼tsp ground cardamom

¼tsp ground ginger

½tsp vanilla bean paste

½tsp lemon zest

Clingfilm/parchment paper

Baking trays

Cooling rack

Embossed rolling pin

Fluted round cutters or shape of your choice
