100ml dark rum, plus 3tbsp extra to flame

250g dried mixed fruit

25g almonds

50g glacé cherries

50g mixed peel

75g dark soft sugar

150g self-raising flour

2 medium eggs

80g Stork or butter, softened

2tsp mixed spice

1 Bramley apple, approx 300g, peeled and grated You will need:
