‘I started in my kitchen’
Tired of waiting to hear back on film ideas and production deadlines, Nicola Hart, 60, a film-maker, used her spare time to concoct a nonalcoholic drinks business called Agua de Madre.
THE IDEA
I’d always been interested in food and drink – I used to run supper clubs for 30 people. In 2017, I visited a zero-waste restaurant in Brighton with my friend Sam Clarke, founder of London’s Moro and Morito restaurants. I ordered a water kefir – fermented water with natural rather than carbonated bubbles.
