■ 1 bulb garlic, trimmed
■ 3 medium beetroot (550g), trimmed
■ 750g butternut pumpkin, peeled, cut into 3cm pieces
■ 1 bunch Dutch carrots, trimmed
■ 2 tsps cumin seeds
■ 1 tblsp olive oil
■ 1 cup white quinoa, rinsed well
■ 1 cup coarsely chopped fresh parsley, plus
