Healthy Apple & Oat Cookies V

Makes: 10-12 cookies
130g rolled oats
130g grated Granny Smith apple
100g grated carrot
40g sultanas
1 egg 50mL light olive oil
½ tsp cinnamon
50g wholemeal self-raising flour
50mL maple syrup
20g caster sugar
1. Line a baking tray with baking paper.
2. Place all ingredients in a bowl and mix well. Using an ice cream scoop, scoop dough into large cookies (about 2 tbsp dough per cookie). Place on tray
