Hazelnut meringue celebration torte

SERVES 20

CHOCOLATE DATE MERINGUE DISCS

6 large egg whites (pasteurised egg whites are available in cartons at most major supermarkets), chilled
½teaspoon cream of tartar
1 cup (220g) caster sugar
2 cups (280g) Brazil nuts, coarsely chopped
200g pitted dates, coarsely chopped into 1cm pieces
150g good quality dark chocolate, coarsely chopped
50g good quality milk chocolate, coarsely chopped

HAZELNUT JAPONAISE DISCS

8 large egg whites, at room temperature
2 cups (440g) caster sugar
2 cups (220g) hazelnut
