Friday night
PRAWN AND RICE PILAF Golden yellow and fragrant
The convenience of frozen cooked prawn tails makes this one-pot meal a seafood dish that's luxurious yet simple.
Ingredients
(serves 6)
• 2 tablespoons butter • 2 tablespoons olive oil • 1 small onion, chopped • 2 carrots, peeled and grated or finely chopped • 2 celery stalks, finely chopped • 2 cups basmati rice, rinsed • 2 cloves garlic, finely chopped • 1 cinnamon stick • 2 cardamom pods, crushed • ½ teaspoon turmeric • 1 tablespoon tomato paste • 1½ cups chicken stock • 1 pack (400 g) frozen cooked prawns – look for “Cooked & peeled” • 3 fresh tomatoes, diced • A bunch of fresh coriander, stalks and leaves chopped separately • Salt and pepper to taste
