PORK WITH FENNEL & BUTTERMILK DRESSING
SERVES 4 PREP 20 MINS COOK 10 MINS
• 250g baby chat potatoes, halved
• 200g beans, trimmed
• 3 tsp fennel seeds
• 1 tsp sweet paprika
• 4 × 150g pork cutlets, fat trimmed
• 1 cup flat-leaf parsley leaves
• ½ pomegranate, seeded, to serve • red garnet sprigs, to serve
BUTTERMILK DRESSING
• ¼ cup buttermilk
• 1 tbsp extra light sour cream
• 1 tbsp lemon juice
• 1 garlic clove, crushed
1 In a medium saucepan, cover potatoes with cold water. Bring to boil on high. Simmer 8-10 mins until tender, adding beans in final minute. Drain. Refresh in cold water. Drain and set aside.
Meanwhile, sprinkle combined fennel and paprika over pork. Heat a barbecue or chargrill plate on medium. Cook pork 3-4 mins each side.
