Mussels can be easily removed from their shells. Put them in a bowl and pour boiling water over them. The shells will spring open, and you can then ease out the mussel and remove the beard.

Mussel, kūmara & horopito fritters

These peppery morsels are the perfect way to enjoy some of our most affordable kaimoana: kuku, or green-lipped mussels!

Makes 10-12 fritters

200g mussel meat, chopped roughly
1 onion, sliced thinly
½ cup grated orange kūmara
1 cup finely shredded cabbage
